Ingredients:
- 1 cup chickpea flour (besan)
- 1 potato, peeled and thinly sliced
- 1 onion, thinly sliced
- 1-2 green chilies, finely chopped
- 2-3 tablespoons chopped coriander leaves
- 1 teaspoon cumin seeds
- Salt
- Red chili powder
First of all, add chickpea flour to the bowl, add some water, and mix it. Add all the spices. When the batter is ready, add coriander leaves and green chilies. Heat oil in the frying pan or kadhai on medium flame. When the oil is heated then dip the sliced potatoes in the batter and fry them in the heated oil. Fry the pakoras until they are golden brown. Serve the hot and crispy pakoras with your favorite chutney or sauce. You can also enjoy mint chutney or tamarind chutney with pakoras.
2. Dahi Baray:
Dahi baray is also one of the staple iftar dishes in Ramadan. They are basically fritters (pakoray) dipped in yogurt and served with spices and chutneys.Let’s start making it:
Ingredients:
- 1 cup Chickpea flour (urad dal)
- 2 cups plain yogurt (curd)
- 1 tablespoon ginger, finely chopped
- 1 green chili, finely chopped (optional)
- Salt to taste
- 1 teaspoon cumin seeds
- 1/2 teaspoon black salt (kala namak)
- 1/2 teaspoon red chili powder
- Tamarind chutney (optional, for serving)
- Mint-coriander chutney (optional, for serving)
Start making a batter of chickpea flour Add chopped ginger, green chili, and salt to the batter and mix well. Heat oil in a deep frying pan or kadhai over medium heat.
Take small portions of the batter and shape them with the help of a spoon. Gently slide them into the hot oil, frying them. Fry them till they are golden brown. After frying them, take them out and soak the fritters in the water, so they can absorb the water and become soft. On the other side whisk the yogurt so that it is smooth. Add sugar if you like sweet dahi baray. Take the fritters out of the water and squeeze in additional water. Then pour the smooth yogurt into the soft fritters. Sprinkle some masala on top and some green chutney, and voila! Dahi Baras are ready!
3. Channa Chat:
This dish is one of the street foods in India and Pakistan. Channa chat is a great favorite dish. It is a savory item that goes well in Iftar after fasting the whole day.
Ingredients:
- 2 cups cooked chickpeas (chana), drained
- 1 medium onion, finely chopped
- 1 medium tomato, finely chopped
- 1 small cucumber, finely chopped
- 1 green chili, finely chopped (optional)
- 1/4 cup chopped fresh cilantro (coriander leaves)
- 2 tablespoons tamarind chutney
- 2 tablespoons mint-coriander chutney
- 1 tablespoon chaat masala
- 1 teaspoon roasted cumin powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon black salt (kala namak)
- Salt to taste
- Juice of 1 lemon
For preparing channa, first, soak them overnight and then cook them on a low flame until they are tender. Then take a mixing bowl and add cooked channa, finely chopped onions, tomatoes, and all the other spices. Mix it well. Give it a good mix. Then add lemon juice and chutneys according to your preference. Garnish it with coriander leaves.
4. Creamy Fruit Chat:
This is a sweet and healthy recipe to give you instant energy in Iftar. As you are fasting the whole day, you need something light and healthy. This recipe is perfect for you, as it has a lot of healthy fruits in it.
Ingredients:
- fresh fruits such as apples, bananas, grapes, oranges, kiwi, musk melon, mangoes, etc chopped or diced
- 1 cup Fresh full fat cream
- 2-3 tablespoons powdered sugar
- 1/2 teaspoon chaat masala
- 1/4 teaspoon black salt (kala namak)
- Chopped nuts (such as almonds, cashews, pistachios) for garnish
Take a bowl and mix all the chopped fruits in it. Whisk the fresh cream with powdered sugar, until it is smooth and frothy. Add the whisked cream to the fruit bowl. Add some chat masala and a little bit of salt to it too. For garnishing, add some chopped nuts. Serve it chilled, and you are going to love it.
5. Dates and Nut Energy Balls:
To break your fast, Muslims often take dates, but to make it more delightful and packed with energy, here is the recipe for date balls.
Ingredients:
- Dates (pitted) 15-20
- Almonds 5-10
- Pistachio 5-7
- Coconut shredded (for garnishing and coating)
- Peanut butter 1 Teaspoon
- Cinnamon powder 1 -2 Pinch
Take a food processor and add pitted dates, nuts (almonds or cashews), a teaspoon of peanut butter, and a pinch of cinnamon. Mix the ingredients until they form a sticky dough. Form the dough into little balls and coat them with shredded coconut, cocoa powder, or broken almonds. Chill the energy balls for at least 30 minutes before serving.
